This Genuine™ Meal Kit contains the ingredients for three delicious, nourishing family meals. Each meal serves a family of four. It is available for pickup April 16 (Denver) or May 7 (Aurora).
Sweet Potato & Black Bean Stew: Tomatoes contain an antioxidant called lycopene which may prevent heart disease. Cooking tomatoes or using canned tomatoes, like this recipe does, makes it easier for our bodies to absorb the lycopene. This hearty stew, which might remind you a little of a chili, is filled with lots of different antioxidants and delicious flavors.
One Pot Spaghetti Pomodoro: Seasoning your blanching water with salt allows you to add flavor from the inside, starting with the pasta. Not only does it heighten the overall balance of flavor in your dish, but it minimizes the overall amount of salt you need to add. Learn to use it well, and your food will always taste great.
Mixed Vegetable Fajitas: The first evidence of the fajita comes from Mexican ranch workers living in West Texas along the Rio Grande in the late 1930s and early 1940s. Here we will be cooking a garden-inspired version with fresh yellow onions and bell peppers, with a side of black beans and rice.
Meal kits will be available for pickup on Saturdays, between 10am–12pm. On the Checkout page, you will select a pickup location: University Hills YMCA (Denver) or YMCA at Whealtands (Aurora).
